With only 3 ingredients and a couple of optional ingredients, you can put together this Barbecue Chicken Salad in a flash. I usually make my own Barbecue Sauce {recipe below}, but you can also use the bottled sauce. We like the added crunch and flavor of the french fried onions and the bite of the sharp cheddar cheese.

Easy barbeque chicken salad is the perfect light lunch or a hearty dinner. The smoky flavor of barbeque sauce blends with the sweet crunch of red onion and roasted corn. The salad is creamy and delicious and can be served with your favorite bread or inside a lettuce wrap.

Earlier this week, we shared how to roast 2 whole chickens at the same time, saving you not only time but also money. This Barbecue Chicken Salad is a perfect way to use some of the leftover chicken. All you need to do is reserve 1 or 2 chicken breasts for this recipe, depending on how big of a crowd you are feeding.

If you already have the chicken breast cooked, this salad can be from the counter to the table in 15 minutes or less. After you have cut the chicken into bite sizes, add it to a heated skillet with your Barbecue Sauce and heat through. While cooking, rinse your lettuce, shake off the excess water, and then coarsely chop the lettuce. Go ahead and remove the skillet from the stove once the chicken is heated through, and add to the lettuce. Top with the french fried onions and sharp cheddar cheese. We serve alongside creamy ranch dressing; you can substitute any dressing you prefer of course.

This salad is perfect for lunch and hearty enough for dinner. A few months ago, while on a trip to Walmart headquarters, I was challenged to come up with a 3 ingredient meal…and so the Barbecue Chicken Salad was created.
