Cooking with Cranberries: Cranberry Relish Recipe

Last week we talked about some great uses for Pumpkin Pie Spice, another ingredient that is perfect to use for the Thanksgiving and Christmas Holidays are Cranberries. Now although I grew up thinking that cranberries at Thanksgiving came from a can, {and I still really like them} cooking with cranberries is easy and can be used in many different recipes.

I love the combination of cranberries and oranges, and although this Cranberry Relish was a little sweet, it was delicious. It makes a perfect side dish for Thanksgiving, a beautiful gift from the kitchen for the holidays {stay tuned…coming next week} and even great on a Turkey Sandwich. {watch for that recipe too}

A little while back, Truvia® natural sweetener sent me some of their products to try on Hoosier Homemade. We have been wanting to try it for some time, so when the All You Magazine contacted us about sharing the Truvia® natural sweetener with you, we decided this would be a perfect time to tell you all about it.

Since diabetes runs in my family, I have been thinking for quite some time that I really need to cut back on the amount of sugar that I eat and cook with. I’ve tried other sweeteners, and truly have not been all that impressed. But the Truvia® natural sweetener is honestly different. It sounds a little weird but I think it even smells fresh and clean.

We used the Truvia® natural sweetener in the Cranberry Relish and besides it being rather sweet, I could not tell a difference. There was no unpleasant after taste and it performed the same as sugar in the cooking process. I think next time we would cut back on it a little, but Doug thought the flavor was great.

Doug and I have been craving this Apples and Cranberries baked in a Pumpkin ever since we tried it last year after Tiffany from Eat at Home shared it in the Virtual Thanksgiving Dinner. We made it again to serve for our Thanksgiving Leftover Party, and it was once again…delicious! This recipe calls for brown sugar, but I’m sure you could use Truvia® natural sweetener in it.

This Cranberry Bread is a must have during the holidays for us! The recipe comes from my grandmother, and although I don’t remember her baking it because I was too young, I do remember my Mom baking it. It also makes a great gift for neighbors, friends, hair dresser, post man, etc.

Here are some Cranberry Facts:

  • Did you know that cranberries freeze really well? I always buy them during the holidays, freeze and use them all winter long.
  • The first commercial canned cranberry sauce was put on the market by the Cape Cod Cranberry Company in 1912. {source Serious Eats}
  • Only 5% of cranberries are sold fresh. The remaining 95% are turned into cranberry juice, cranberry sauce, and other cranberry products.
  • Ongoing research continues to suggest that cranberries may offer a natural defense against arteriosclerosis, which can lead to heart attacks, angina and blood clots. {source Cape Blanco Cranberries}

Cranberry Relish Recipe

A perfect side dish for Thanksgiving. Recipe from PocketChangeGourmet.com

  • Total Time: 15 minutes

Ingredients

Scale
  • 6 cups fresh cranberries
  • 1 cup cranberry juice
  • 1 1/2 cups sugar or 3/4 cup Truvia® natural sweetener
  • 1/4 teaspoon salt
  • 1 cinnamon stick
  • 1 tablespoon orange peel, finely grated

Instructions

  1. Wash and drain cranberries
  2. In a large saucepan, combine juice, sugar, salt and cinnamon stick
  3. Bring to a simmer over medium heat, stirring to dissolve the sugar
  4. Cook for 1 minute
  5. Add the cranberries, bring to a boil, reduce heat
  6. Boil gently over medium-high heat for 3-5 minutes or until skins pop, stirring occasionally
  7. Stir in orange peel
  8. Cool completely, remove cinnamon stick
  9. If desired, slightly mash the cranberries
  10. Serve with crackers, cream cheese, as a side dish, or give as a gift
  • Prep Time: 5 minutes
  • Cook Time: 10 minutes

  1. I’d like to try Truvia because I really, really do not like to use “artificial sweeteners.” Don’t trust them! Think they probably make people sick in the long run! On the other hand, diabetes runs in my family, too, and I do love sweet stuff … so Truvia sounds like something I should look into (or, bite into, so to speak).

      sorry i was trying to make in as number 9 and didn’t get to tell you what i wanted to try Truvia in!! My mom is diabetic, so using truvia in cranberry sauce would be a huge help for her!

  7. I would like to try truvia in my coffee because everyone reccommends truvia and I have never tried it but I dont like spenda in my coffee yuck! I love ALL YOU magazine too
