Cheesy Scalloped Potatoes and Ham

Is your refrigerator overflowing with leftovers, like mine? I always seem to cook too much on the Holidays. But that’s okay, as far as I’m concerned leftovers are great – they help stretch your grocery budget.

One of the dishes we always serve to use up the leftovers is Scalloped Potatoes and Ham. Doug and the boys always look forward to this meal.

The creamy mixture of heavy cream and chicken broth is filled with flavor from sauteed onions and garlic. And seasoned with thyme, salt, pepper and bay leaves. Then the addition of thinly sliced potatoes and ham. And topped with lots of cheese, makes these Cheesy Scalloped Potatoes and Ham irresistible.

Scotch-Brite Dishwand

Since clean up is definitely something we want to get through quickly and painlessly, we were happy to try out the Scotch-Brite Dishwand and put it to the test.

Ingredients

Scale
  • 4 tablespoons Butter, unsalted
  • 1 Onion (about 1 cup) finely chopped
  • 2 teaspoons Dried Thyme (or 1 tablespoon fresh)
  • 2 Garlic Cloves, minced
  • 1 1/2 teaspoons Salt
  • 1/4 teaspoon Pepper
  • 68 medium sized potatoes (about 2 pounds), thinly sliced, peeled and washed
  • 1 cup Chicken Broth
  • 1 cup Heavy Cream
  • 1 cup Ham, chopped
  • 2 Bay Leaves
  • 1 cup Shredded Cheese (we used Colby-Jack)

Instructions

  1. Preheat oven to 375 degrees and spray an 8 inch baking dish with cooking spray
  2. In a large pot, melt butter. Add onions and saute, stirring occasionally until soft and tender, about 3-4 minutes
  3. Add Thyme, Salt, Pepper and Garlic, cook for 1-2 minutes
  4. Pour in Broth, Cream and Bay Leaves. Add Potatoes.
  5. Bring to slight boil, reduce heat, cover and simmer about 20-25 minutes or until potatoes are tender.
  6. Stir in Ham, heat through
  7. Transfer mixture to prepared baking dish, sprinkle with cheese.
  8. Place in oven and cook on 375 degrees for about 15 minutes or until bubbly and cheese is melted

Notes

Cook time includes on stove top and oven cooking time.

  2. Yum. I’ll be making this! I found some sliced spiral ham that’s been all chopped up in slices & peices it says, at my heb which isn’t everywhere but it’s only 3.99 & it’s for 24 oz. (I guess discards) all year long. We have a family of 6 but I seperate it into 2 meals it has been such a find! It’s worth a look if one doesn’t have some in the freezer. I make another one of ur pasta cheese ham dishes. I appreciate ur website! Thx!
