Cheesy Mashed Potato Casserole and Weekly Menu Plan

Happy Labor Day! I hope you are all enjoying your holiday and a little relaxing. We took the weekend off, so we will be working today. Over the weekend we made this delicious Cheesy Mashed Potato Casserole and just had to share it with you.

It’s simple enough for weeknight meals, but special for holiday gatherings too.

The Mashed Potato Casserole is also perfect for a make-ahead dish. Let cool on the counter, then wrap with foil or plastic wrap and place in fridge. When you are ready to cook, remove the casserole from the refrigerator 30 minutes before cooking. Preheat oven to 350 degrees, uncover and bake for 20 – 30 minutes.

  1. That potato dish looks delicious and I cant wait to try them. We eat a lot of potatoes at my house, and this looks like a good one to add to my collection. Your menu looks great, especially the Grilled Chicken and Cream Cheese Enchiladas. Your pico de galla recipe is the same as mine too, except I use a tad more onion and cilantro.
