Many moons ago, I served Turkey Divan after Thanksgiving to use up leftover turkey. So when we had some extra meat from roasting chickens last weekend, it only seemed perfect to give this Cheesy Chicken Divan Casserole a try.

It’s a super easy casserole for a weeknight dinner when you’re short on time. Perfect for using up leftover chicken or turkey, and if you are in a hurry with no leftovers, just grab a rotisserie chicken at the store and you have a meal complete with meat and vegetables.

I used a layer of freshly cooked broccoli to cover the bottom of the casserole dish, but you could certainly use up any leftovers you may have or a bag of frozen broccoli works just as well. Then a layer of chicken, and then a creamy combination of soup, mayonnaise, and lemon juice. Let’s not forget the cheese, oh the wonderful cheese that brings everything together in this wonderful dish.

The thick layer of shredded cheese makes the casserole even more creamy and then topped with stuffing mix, or you can also use bread crumbs.

This Cheesy Chicken Divan Casserole is great as a make-ahead meal, and can also be frozen and served later when you need a meal in a hurry. Just remove it from the freezer an hour before you plan on cooking it for your family.

Ingredients

Scale
  • 2 cups fresh or frozen broccoli flowerrets, cooked
  • 23 cups cooked chicken, cut into bite size pieces or smaller
  • Salt to taste
  • 1 cup herb or chicken stuffing mix (or seasoned bread crumbs)
  • 1 tablespoon butter, melted
  • 1 (10 3/4 oz) can cream of chicken soup
  • 1/2 cup mayonnaise
  • 1/2 teaspoon lemon juice
  • 1 cup shredded cheese (cheddar or whatever you like)

Instructions

  1. Preheat oven to 350 degrees, light coat 8×8 baking dish with cooking spray
  2. Add cooked broccoli to the baking dish
  3. Add salt to chicken to taste, add on top of broccoli
  4. Combine soup, mayonnaise and lemon juice, spread over chicken using the back of spoon to spread
  5. Sprinkle cheese evenly over soup mixture
  6. Combine melted butter and stuffing mix and sprinkle over cheese
  7. Bake at 350 degrees for about 20 minutes or until stuffing mix is golden brown and soup mixture is bubbly

Notes

This recipe can easily be doubled to make in a 13×9 baking dish.

  3. Do you make the stuffing mix according to package directions first or put the dry mix on top??

    • Hi Nancy, the stuffing is already prepared stuffing. So make it according to the directions on the box or use leftover stuffing.
