Campanelle with Italian Sausage, Peppers and Tomatoes

Time is short…you need to get dinner on the table fast! Sound familiar? We all know it too well. This recipe for Campanelle with Italian Sausage, Peppers and Tomatoes goes together in a snap and on the table in less than 30 minutes!

This Italian dish is bursting with flavor, but uses simple ingredients. Cook the pasta while you cut and prepare the sausage and vegetables and you will have dinner on the table in a snap!

Simple ingredients include…

  • Campanelle a short, curly pasta, you could also use Cavatelli which is what the original recipe called for, or any short pasta you like
  • Italian sausage brats, any sausage is fine
  • Peppers – either 1 red pepper or about 1/3 each of red, yellow and orange
  • Red onion
  • Grape Tomatoes
  • Olive Oil
  • Fresh Oregano
  • Salt and Pepper

The recipe made a big pan full for dinner, with plenty of leftovers for lunch the next day.

Campanelle with Italian Sausage, Peppers and Tomatoes

Ingredients

  • 1 box Campanelle pasta or other short pasta
  • 3/4 pound {about 4} Italian sausage brats or other sausage
  • 1/4 cup Olive oil
  • 1 pint Grape Tomatoes
  • 1 small red onion, cut into 1 inch pieces
  • Peppers - red, yellow and orange about 1/3 from each to total 1 pepper - or you 1 red pepper
  • 2 sprigs fresh Oregano
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper

Instructions

  1. Cook pasta according to directions on box
  2. Meanwhile, slice sausage and cut peppers and onions
  3. Heat oil in skillet and cook sausage 5-7 minutes or until completely cooked - cook less if sausage is fully cooked
  4. Transfer sausage to a plate, leaving oil and drippings in skillet
  5. Add vegetables, oregano, salt and pepper to skillet and cook about 6-8 minutes or until tomatoes begin to burst. Remove oregano and drain the oil if necessary
  6. Drain the pasta reserving 1/2 cup water, return to pan
  7. Stir in sausage and vegetable mixture
  8. Add water and heat through
  9. Sprinkle with oregano leaves if desired, serve warm
