8 Back to School Breakfast Ideas

It’s that time of year again, when we are all scrambling to get the kids fed in the morning and out the door. In our house, we are lucky to even get the kids to eat breakfast, let alone, something good for them. Since we often struggle with Back to School Breakfast Ideas, we thought maybe some of you do as well. So we put together a few ideas that we thought you may like.

One of our favorites are these Zucchini Raisin Muffins, and of course, with the over abundance of zucchini in the garden, they are perfect!

The combination of zucchini and raisins, makes these muffins really moist as well as giving them a delicious flavor! You can certainly make up a couple batches of these, freeze them and have them ready for a busy weekday breakfast!

Another idea for a quick breakfast are these Biscuit Bowls. Cook everything up ahead of time, and just pop them in the microwave and you have a warm breakfast in minutes.

Even though pancakes seem like they would take too long, they really don’t. Have bags of Pancake Mix ready, with the additional milk and eggs needed, and in minutes you have pancakes ready to put on the hot griddle.

Same as the Biscuit Bowl, cook these Biscuits and Sausage ahead and simply re-heat in the microwave. Add a slice of cheese and you have your own Sausage Breakfast Sandwich, just like you get in the drive-thru! Need to freeze them? There are instructions for that too!

Zucchini Raisin Muffins

Zucchini Raisin Muffins

A moist muffin that is perfect for a quick breakfast. Recipe from


  • 1 1/2 cups Flour
  • 1 cup Sugar
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Cinnamon
  • 2 Eggs
  • 1/2 cup Oil
  • 2 cups Zucchini, shredded
  • 1/2 cup Raisins


  1. Preheat oven to 350 degrees, fill a muffin tin with cupcake liners
  2. In a large bowl, combine dry ingredients and whisk together
  3. Combine eggs and oil, add to dry ingredients and blend just until combined
  4. Mix in the zucchini and raisins
  5. Bake for about 15 minutes or until a toothpick inserted in the middle comes out clean
  6. To freeze, cool completely and place in a freezer bag, remove air and store in freezer for up to 2 months.
  7. To thaw, place in fridge overnight or on the counter for several hours.
